Lemon Chia Donut

  • 1 cup Almond flour
  • 2 TBSP Coconut flour
  • 1/2 tsp Baking soda
  • pinch Salt
  • 1 Egg
  • 3 TBSP Maple syrup
  • 1 TBSP Coconut oil melted
  • 1 Lemon zested
  • 1 1/2 TBSP Lemon juice fresh
  • 1 TBSP Chia seeds
  • 1/2 tsp Vanilla extract
  • 1 TBSP Collagen powder

Honey Glaze

  • 1 tsp Coconut oil
  • 1 TBSP Honey or to taste

Indulgent Hot Chocolate

  • 2 cups Whole milk
  • 1/4 cup Heavy cream
  • 2 oz Dark chocolate bar chopped
  • 1 TBSP Cocoa powder
  • 1 TBSP Maple syrup
  • 1/4 tsp Salt
  • 1/4 tsp Vanilla extract
  • ¼ tsp Orange peel
  • 1 TBSP Unsalted butter

Fruit

  • 2 cups Fresh fruit e.g., strawberries, raspberries, or banana slices, washed and prepared as needed

Instructions

  • Prep the ingredients per the instructions above.
  • Preheat and prepare the pan: Preheat the oven to 350°F (175°C). Lightly oil a donut pan.
  • Make donut batter: In a medium bowl, whisk almond flour, coconut flour, baking soda, and salt. In another bowl, whisk egg, maple syrup, melted coconut oil, lemon zest, lemon juice, chia seeds, and vanilla extract. Combine wet and dry ingredients until smooth. Stir in collagen powder. Spoon or pipe the batter into donut molds, about ¾ full.
  • Bake donuts: Bake for 12–14 minutes, until lightly golden and the center springs back. Cool for 5 minutes in the pan, then transfer to a rack.
  • Make the glaze: In a small saucepan over low heat, cook coconut oil for 2–3 minutes until softened. Mash and stir in honey. Let cool slightly to thicken.
  • Make hot chocolate: Heat milk and cream in a saucepan until steaming. Whisk in chopped chocolate until melted. Add cocoa powder, maple syrup or sugar, salt, vanilla, and orange peel. Simmer for 2–3 minutes, remove orange peel, then whisk in butter until glossy. Top with whipped cream.
  • Finish and serve: Dip or drizzle donuts with glaze. Serve with fresh fruit and hot chocolate.
