Ingredients
Rooibos Iced Tea
- 2 Rooibos tea bags
- 2 cups Water
- Honey or sugar, to taste
- Ice cubes
Sandwich
- 2 TBSP Mayonnaise
- 1 tsp Lime juice
- 2 TBSP Fresh parsley chopped
- 4 slices Sourdough bread toasted, optional
- 1 cup Microgreens
- 4 slices Provolone cheese
- 6 oz Deli turkey breast
Carrots and Hummus
- 1 cup Carrots peeled and cut into sticks, or baby carrots
- ½ cup Hummus
Instructions
- Prep ingredients: Prepare all ingredients as listed. Peel and cut carrots if using whole carrots.
- Make rooibos tea: Bring water to a boil. Steep rooibos tea bags for 5–7 minutes. Remove bags, sweeten to taste, and chill. Serve over ice.
- Make lime-herb mayo: In a small bowl, mix mayonnaise, lime juice, and chopped parsley. Set aside.
- Assemble sandwiches: Spread the lime-herb mayo evenly on one side of each slice of toasted sourdough. Layer with microgreens, turkey breast, and provolone cheese. Top with a second slice of bread, mayo side down, and gently press. Cut each sandwich in half.
- Serve: Serve sandwiches with carrot sticks and hummus alongside the rooibos iced tea.
