Ingredients
Cucumber Water
- 24 oz Water
- 8 slices Cucumber
- Ice cubes
Vegetable Hummus Wrap
- 2 large Tortilla wraps (whole wheat or preferred type)
- 1 cup Hummus
- 1 cup Carrots shredded
- 1 Cucumber thinly sliced
- 1 Tomato sliced
- 1 cup Arugula
- Salt to taste
- Black pepper to taste
- 1 Avocado ripe, sliced
- 6 slices Parmesan cheese wedge
Cheese and Crackers
- 12 Crackers
- 12 Slices Your choice of cheese (e.g., Cheddar or Brie)
Mango
- 1 cup Mango sliced
Instructions
- Prepare all ingredients as listed above.
- For the cucumber water, place the cucumber slices in a pitcher with the water and let it infuse in the refrigerator. Serve over ice if desired.
- Lay the tortilla wraps flat on a clean surface. Spread a generous amount of hummus on each wrap. Layer with carrots, cucumber slices, tomato slices, avocado, arugula, and Parmesan cheese slices. Season with salt and black pepper. Fold in the sides, roll up tightly, and slice each wrap in half.
- Serve the wraps alongside cheese, crackers, mango, and cucumber water
