Ingredients
Greek Meatballs
- 4 oz Ground beef
- 4 oz Ground lamb
- 1/4 cup Seasoned bread crumbs
- 2 TBSP Red onion finely chopped
- 1 clove Garlic minced
- 1/2 Egg beaten
- 1/2 tsp Dried oregano
- 1/2 tsp Ground cumin
- Salt to taste
- Black pepper to taste
- 1 tsp Extra-virgin olive oil for cooking
- 2 Pita bread
Tzatziki Sauce
- 1/4 Cucumber grated and drained
- 1/4 cup Greek yogurt
- 1 clove Garlic minced
- 1 TBSP Fresh dill chopped
- 1 TBSP Red onion
- Salt to taste
- Black pepper to taste
Tomato, Avocado, Feta, and Olives
- 1 Tomato sliced
- 1 Avocado sliced
- 2 tsp Extra-virgin olive oil
- 1 clove Garlic minced
- 1/2 tsp Dried oregano
- Salt to taste
- Black pepper to taste
- 2 oz Feta cheese sliced
- 1/2 cup Greek olives
Mango Lassi
- 1 cup Frozen mango
- 1/4 cup Plain yogurt
- 3 cups Milk
- 1/4 tsp Ground cardamom
- 1 TBSP Maple syrup (to taste)
Instructions
- Prepare the ingredients as instructed above.
- Preheat the oven to 375°F (190°C).
- In a bowl, combine ground beef, ground lamb, breadcrumbs, red onion, garlic, egg, oregano, cumin, salt, and black pepper.
- Shape the mixture into meatballs about 1 inch in diameter.
- Heat olive oil in a skillet over medium heat. Brown the meatballs on all sides.
- Transfer meatballs to a baking sheet and bake for 10–12 minutes, or until cooked through.
- To make the tzatziki sauce, grate the cucumber and squeeze out excess liquid.
- In a bowl, combine Greek yogurt, cucumber, garlic, dill, olive oil, salt, and black pepper. Stir and refrigerate until ready to serve.
- Arrange tomato slices and avocado on a plate. Drizzle with olive oil, sprinkle with garlic, oregano, salt, and pepper.
- Warm pita bread in the oven or on a skillet until soft and slightly golden.
- In a blender, combine mango, yogurt, milk, cardamom, and sugar. Blend until smooth. Adjust sweetness and consistency with more sugar, milk, or mango as desired.
- Place meatballs on plates and spoon tzatziki over them. Serve with tomato, avocado, feta, olives, warm pita bread, and mango lassi.
