Yogurt pots with fruit, granola and strawberry coulis
- 1 cup Strawberries
- ¼ cup Water
- 1 TBSP Sugar
- ¼ tsp Lemon juice
- ½ cup Greek yogurt or your choice
- ½ cup Mixed fresh fruit such as berries, banana, or kiwi
- ¾ cup Granola
- 1 TBSP Honey optional
Coffee
- Coffee brewed to your liking
- Your choice of sweetener optional
- Your choice of creamer optional
Instructions
- Prepare the strawberry coulis: In a small saucepan, combine strawberries, water, and sugar. Cook over medium heat for 3–4 minutes, stirring occasionally, until strawberries soften and release juices. Mash with a fork or blend for a smoother texture. Stir in lemon juice and let cool.
- Mix yogurt: In a bowl, combine Greek yogurt with honey (if using) until smooth. Adjust to taste.
- Assemble yogurt pots: Divide yogurt evenly between two glasses or bowls. Top with mixed fruit. Sprinkle granola generously over the top to keep the ratio leaning toward more granola. Drizzle with cooled strawberry coulis.
- Brew coffee and prepare with sweetener and creamer as desired.
- Serve yogurt pots with coffee.
