Ingredients

Hot Honey Mustard Sauce

  • ½ tsp Garlic powder
  • ½ tsp Onion powder
  • ¼ tsp Cayenne pepper
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • 3 TBSP Honey
  • 2 TBSP Yellow mustard

Sandwich

  • 8 oz Boneless chicken thighs
  • 2 Sub rolls
  • 1 cup Pickle slices (optional)

Sides

  • 1 cup Carrots peeled and cut into sticks (or use baby carrots)
  • ½ cup Hummus

Mango Lassi

  • 1 cup Frozen mango chopped
  • ¼ cup Plain yogurt
  • 3 cups Milk
  • ¼ tsp Ground cardamom
  • 1 TBSP Sugar to taste

Instructions

  • In a bowl, whisk together the garlic powder, onion powder, cayenne pepper, salt, black pepper, honey, and mustard to create the hot honey mustard sauce. Marinade the chicken with half and reserve half for serving.
  • Preheat the air fryer or oven to 400°F (204°C).
  • Place the chicken in the air fryer basket (or on a baking sheet and cook at 400°F (204°C) for 12–15 minutes), or until golden and the chicken reaches 165°F (74°C) internal temperature. Slice the cooked chicken.
  • Toast the rolls.
  • Layer the rolls with chicken, drizzling with reserved sauce, and topping with pickle slices if desired. Close with the top halves and gently press down. Cut each sandwich in half for serving.
  • In a blender, combine mango, yogurt, milk, cardamom, and sugar. Blend until smooth and creamy. Taste and adjust sweetness as desired.
  • Serve the sandwiches with carrots, hummus, and mango lassi.
