Ingredients

Breakfast Wrap

  • 4 strips Bacon
  • 4 Eggs beaten
  • Salt to taste
  • Black pepper to taste
  • ½ TBSP Butter or oil
  • ½ cup Cheddar cheese shredded
  • 2 Large Flour tortillas 10-inch

Chipotle Mayo

  • 2 TBSP Mayonnaise
  • ½ tsp Chipotle sauce (from canned chipotles)
  • ¼ tsp Lime juice optional

Fruit

  • 1 cup Fresh fruit e.g. berries, melon, or orange slices, washed and prepared as needed

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • In a skillet over medium heat, cook bacon on both sides until crispy. Transfer to a paper towel-lined plate.
  • While bacon cooks, mix mayonnaise, chipotle powder or adobo sauce, and lime juice in a small bowl. Set aside.
  • Heat butter (or a little bacon grease) in the skillet. Scramble eggs gently until just set, 2–3 minutes. Remove from heat.
  • Spread chipotle mayo in the center of each tortilla. Add the scrambled eggs, bacon strips, and shredded cheddar. Roll tightly into a wrap.
  • Serve wraps with fruit and Orange juice.
