Ingredients
Breakfast Wrap
- 4 strips Bacon
- 4 Eggs beaten
- Salt to taste
- Black pepper to taste
- ½ TBSP Butter or oil
- ½ cup Cheddar cheese shredded
- 2 Large Flour tortillas 10-inch
Chipotle Mayo
- 2 TBSP Mayonnaise
- ½ tsp Chipotle sauce (from canned chipotles)
- ¼ tsp Lime juice optional
Fruit
- 1 cup Fresh fruit e.g. berries, melon, or orange slices, washed and prepared as needed
Orange Juice
- 16 oz Orange juice cold
Instructions
- In a skillet over medium heat, cook bacon on both sides until crispy. Transfer to a paper towel-lined plate.
- While bacon cooks, mix mayonnaise, chipotle powder or adobo sauce, and lime juice in a small bowl. Set aside.
- Heat butter (or a little bacon grease) in the skillet. Scramble eggs gently until just set, 2–3 minutes. Remove from heat.
- Spread chipotle mayo in the center of each tortilla. Add the scrambled eggs, bacon strips, and shredded cheddar. Roll tightly into a wrap.
- Serve wraps with fruit and Orange juice.
