Ingredients
Scrambled Eggs with Smoked Gouda, Ham, and Poblano Pepper on Whole Wheat Wrap
- 1 TBSP Extra-virgin olive oil or butter
- 4 oz Smoked ham diced
- 1 cup Poblano pepper finely diced
- 4 Eggs beaten
- ¼ tsp Salt
- ¼ tsp Black pepper
- ½ cup Smoked Gouda cheese shredded
- 2 Whole wheat tortilla 8–10 inch
Fruit
- 1 cup Mixed fresh fruit such as cherries, berries, or peach slices, washed and prepared as needed
OJ
- 12 oz Orange juice fresh-squeezed or store-bought
Instructions
- Prepare the ingredients as listed above.
- Heat olive oil or butter in a non-stick skillet over medium heat. Add the diced poblano pepper and cook for 2–3 minutes until softened. Add the diced ham and cook 1–2 minutes until lightly browned.
- Pour the beaten eggs into the skillet. Stir gently until mostly set but still soft, about 2–3 minutes. Season with salt and black pepper.
- Sprinkle smoked Gouda over the eggs. Stir gently until melted and the eggs are creamy and fully cooked, about 1 minute. Remove from heat.
- Warm the whole wheat wraps in a dry skillet for 20 seconds per side, or microwave for 10–15 seconds until pliable.
- Portion the egg mixture onto the wrap. Fold in the sides and roll tightly.
- Serve the wrap with fresh fruit and orange juice.
