Ingredients

Toppings

  • 4 oz Tortilla chips
  • 1/4 cup Monterey jack cheese shredded
  • 1/4 cup Pepper jack cheese shredded
  • 1/2 cup Cheddar cheese shredded
  • 1/2 cup Refried beans
  • 1 cup Romaine lettuce shredded
  • 1/2 cup Tomato diced small
  • 1 Jalapeño pepper sliced (optional)
  • 1/4 cup Red onion diced
  • 4 TBSP Sour cream

Guacamole

  • 1 Avocado pitted and diced
  • 2 tsp Red onion minced
  • 1/4 tsp Lemon juice
  • 1 tsp Fresh cilantro chopped

Seasoning

  • Salt to taste
  • Black pepper to taste

Beef

  • 8 oz Ground beef
  • 1/2 tsp Onion powder
  • 1/2 tsp Ground cumin
  • 1/2 tsp Garlic powder
  • 1/2 tsp Paprika
  • 1/4 tsp Chili powder

Beer

  • 24 oz Light beer cold

Instructions

  • Prep the ingredients as listed above.
  • Preheat the oven: Set the broiler to low.
  • Make the guacamole: In a bowl, mash the avocado until smooth. Mix in minced red onion, lemon juice, and cilantro. Season with salt and pepper. Refrigerate until ready to use.
  • Cook the beef: Heat a nonstick pan over medium heat. Add ground beef along with onion powder, cumin, garlic powder, paprika, and chili powder. Cook while breaking up the beef with a spatula. Once no longer pink, season with salt and pepper.
  • Assemble the nachos: Place tortilla chips on a baking sheet. Top with cooked beef, cheeses, and refried beans.
  • Broil: Place under the broiler until the cheese is fully melted.
  • Top and serve: Remove from the oven. Add lettuce, tomato, jalapeño (if using), red onion, sour cream, and guacamole. Serve with a cold beer.
