Ingredients

Sandwich

  • 4 slices Sourdough bread
  • 4 oz Brie cheese sliced
  • 6 oz Deli turkey breast sliced
  • 2 TBSP Cranberry sauce
  • 1 cup Baby spinach

Sides

  • 1 cup Carrots peeled and cut into sticks (or use baby carrots)
  • 1/2 cup Hummus

Chia Fresca

  • 1/2 cup Lemon juice fresh squeezed
  • 16 oz Water
  • 2 TBSP Maple syrup or honey (your choice)
  • 1/2 tsp Chia seeds
  • pinch Salt
  • 2 sprigs Fresh mint for garnish

Instructions

  • Optional: toast the bread.
  • Spread cranberry sauce on one side of each slice. Layer with spinach, turkey, and brie.
  • Place the remaining bread slices on top. Cut in half.
  • To make the chia fresca: stir together all the ingredients. Let sit 5 minutes for the chia to bloom.
  • Serve the sandwich with carrots and hummus
