Ingredients

Rice Pilaf

  • 1 TBSP Extra-virgin olive oil
  • 2 TBSP Onion minced
  • 1 clove Garlic minced
  • 1/2 cup White rice rinsed
  • 1 cup Chicken broth

Grilled Steak

  • 8 oz Ribeye steak
  • 1 TBSP Extra-virgin olive oil
  • Salt
  • Black pepper to taste

Grilled Corn on the Cob

  • 2 ears Corn on the cob
  • 2 tsp Butter

Moscow Mule Mocktail

  • 16 oz Ginger beer
  • 2 tsp Lime juice or to taste
  • Fresh mint for garnish

Instructions

  • Prep the ingredients per the instructions above.
  • Make the Rice Pilaf: Heat olive oil in a pot over medium heat. Sauté the onion and garlic until the onion begins to soften. Stir in the broth and rice. Cook the rice according to package directions. Once cooked, season the rice with salt and pepper to taste.
  • Prepare the Steak: Drizzle olive oil over the steak. Season generously with salt and black pepper. (This step can be done up to 24 hours in advance.)
  • Preheat a grill or grill pan over medium heat.
  • Grill the Corn: Place the corn on the grill and cook, turning occasionally, until all sides are nicely charred and tender. Once done, spread butter over the corn and lightly season with salt. Set aside.
  • Grill the Steak: Grill the steak on both sides to your desired temperature (see below). Remove from the grill and let rest for 5 minutes before slicing.
  • Make the Moscow Mule Mocktail: Pour ginger beer and lime juice into glasses. Garnish with fresh mint.
  • Serve the steak with rice pilaf, grilled corn, and virgin Moscow mule.

Steak Internal Temperatures:
Rare: 115 - 120°F (46 - 48°C)
Medium Rare: 125 - 130°F (51 - 54°C)
Medium: 135 - 140°F (57 - 60°C)
Medium Well: 145 - 150°F (62 - 65°C)
Well Done: 160°F (71°C)
