Ingredients

Black Bean Chicken Sausage Breakfast Burrito in Whole Wheat Wrap

  • 2 tsp Butter
  • 2 Chicken sausage links chopped
  • ¼ cup Red onion finely diced
  • ¼ cup Green bell pepper finely diced
  • 4 Eggs beaten
  • tsp Salt
  • tsp Black pepper
  • ½ cup Black beans drained and rinsed
  • 2 Whole wheat tortilla 8–10 inch
  • ½ cup Mexican cheese blend optional

Fruit

  • 1 cup Fresh fruit e.g. pineapple chunks, berries, or apple slices

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Prepare the ingredients per the instructions above.
  • Heat a skillet over medium heat. Melt the butter and saute the chicken sausage until browned. Add the red onion and green bell pepper and sauté for 2–3 minutes until softened.
  • Pour in the beaten eggs and stir gently until the eggs are just set, about 2–3 minutes. Season with salt and black pepper. Remove from heat.
  • Warm the whole wheat wraps in a dry skillet for 15–20 seconds per side or in the microwave wrapped in a damp paper towel for 20 seconds until soft.
  • Portion the sausage and egg mixture and black beans evenly between the wraps. Top with cheese if using. Fold in the sides and roll tightly into burritos. Slice in half if desired.
  • Serve the burritos with fresh fruit and orange juice. Enjoy your breakfast!
