Ingredients

Home Fries

  • 2 cups Potatoes diced
  • 2 TBSP Extra-virgin olive oil
  • ¼ tsp Garlic powder
  • ¼ tsp Paprika
  • Salt to taste
  • Black pepper to taste

Chicken Sausage

  • 4 Chicken sausage links

Eggs

  • 4 Eggs
  • 2 tsp Butter or oil for cooking
  • Salt to taste
  • Black pepper to taste

Avocado

  • 1 Avocado sliced
  • Salt to taste
  • Black pepper to taste
  • 1 tsp Lime juice drizzled

Fruit

  • 1 cup Fresh fruit e.g. banana, grapes, apple

Orange Juice

  • 16 oz Orange juice cold

Coffee

  • 2 cups Coffee
  • Your choice of creamer
  • Your choice of sweetener

Instructions

  • Preheat the oven: Set oven to 400°F (204°C).
  • Prepare the ingredients: Dice the potatoes. Slice the avocado. Wash and prepare the fruit.
  • Cook the home fries: Toss diced potatoes with olive oil, garlic powder, paprika, salt, and black pepper. Spread evenly on a baking sheet and roast for 20–25 minutes, flipping halfway through, until golden and tender.
  • Cook the sausage: Place chicken sausages on a separate baking sheet and bake for 15–20 minutes, or until they reach an internal temperature of 155°F (68°C).
  • Cook the eggs: In a nonstick skillet over medium heat, melt butter or heat oil. Crack in the eggs and cook to your preference (sunny side up, over easy, or scrambled). Season with salt and black pepper.
  • Season the avocado: Sprinkle avocado slices with salt, black pepper, and a drizzle of lime juice.
  • Prepare the coffee: Prepare the coffee to your liking.
  • Serve: Plate the eggs, sausage, home fries, and avocado slices. Add a portion of fresh fruit to each plate. Serve with glasses of orange juice and hot coffee. Enjoy!
