Ingredients
Maine Lobster Rolls
- 8 oz Cooked lobster meat chopped
- ⅓ cup Celery chopped small
- 2 TBSP Mayonnaise
- 1 tsp Lemon juice
- 1 TBSP Fresh chives chopped
- 1 TBSP Fresh dill
- Salt to taste
- Black pepper to taste
- 4 Hot dog buns
- 2 TBSP Butter
Cheese & Crackers
- 2 oz Your choice of block cheese sliced
- 4 oz Crackers
Sides
- 2 Pickle spears
Sparkling Chia Fresca
- ½ cup Lemon juice fresh squeezed
- 2 TBSP Maple syrup or honey, (your choice)
- ½ tsp Chia seeds
- pinch Salt
- 16 oz Sparkling water
- Fresh mint leaves for garnish
Instructions
- Prepare all ingredients as listed above. Chop the lobster meat and celery, slice the cheese, and measure out the remaining ingredients.
- In a bowl, combine the chopped lobster meat, celery, mayonnaise, lemon juice, chives, dill, salt, and black pepper. Mix well until the lobster meat is evenly coated.
- Preheat a skillet or griddle over medium heat. Melt the butter in the skillet.
- Place the hot dog buns in the skillet and toast until golden brown on both sides, about 2 minutes per side.
- Divide the lobster mixture evenly between the toasted buns, filling them generously.
- To make the chia fresca, squeeze fresh lemon juice and set aside. Measure the maple syrup or honey, chia seeds, and a pinch of salt. In a medium pitcher, combine the lemon juice and maple syrup or honey. Stir well. Add the chia seeds and salt, then slowly pour in sparkling water while stirring gently to combine. Pour the chia fresca into glasses and garnish each with a sprig of fresh mint.
- Plate the lobster rolls alongside the sliced cheese, crackers, pickle spears, and sparkling chia fresca.
