Ingredients

Mediterranean Frittata

  • ¼ cup Red onion diced
  • ¼ cup Bell pepper any color, diced
  • ¼ cup Cherry tomatoes halved
  • ¼ cup Kalamata olives pitted and chopped
  • ¼ cup Feta cheese crumbled
  • 1 TBSP Extra-virgin olive oil
  • ¼ tsp Dried oregano
  • Salt to taste
  • Black pepper to taste
  • 4 Eggs

Sausage

  • 4 Chicken sausage links

Orange Juice

  • 16 oz Orange juice cold

Fruit

  • 1 cup Fresh fruit washed and prepared as needed, e.g. blackberries, raspberries, or kiwi

Instructions

  • Prep the ingredients: Dice the onion and pepper. Halve the cherry tomatoes, chop the olives, crumble the feta, and prepare fresh fruit.
  • Preheat the oven: Set your oven to 375°F (190°C).
  • Sauté the vegetables: Heat olive oil in an oven-safe skillet over medium heat. Add red onion and bell pepper, cook for 2–3 minutes until softened. Add cherry tomatoes and olives, cook for another 1–2 minutes. Season with oregano, salt, and black pepper.
  • Prepare the egg mixture: In a bowl, whisk eggs until smooth. Stir in the crumbled feta.
  • Combine and cook frittata base: Pour egg mixture over sautéed vegetables. Cook on the stovetop for 2–3 minutes until the edges begin to set.
  • Bake the frittata: Transfer skillet to the oven and bake for 8–10 minutes, or until fully set and golden on top.
  • Cook the sausage: While the frittata bakes, cook chicken sausage links in a skillet over medium heat for 5–8 minutes, turning occasionally until browned and cooked through.
  • Serve: Let the frittata rest for 1 minute, then slice into wedges. Plate with sausage links and fresh fruit. Pour orange juice into glasses. Enjoy!
