Huevos Rancheros

  • 4 oz Ground chorizo sausage crumbled
  • ½ cup Black beans canned, drained and rinsed
  • 2 Sprouted grain tortilla
  • 2 tsp Butter
  • 4 Eggs
  • ½ cup Salsa

  • ¼ cup White cheddar shredded
  • 1 TBSP Fresh cilantro for garnish

  • Black pepper

Fruit

  • 2 cups Mixed fruit such as (kiwi grapes banana)

Orange Juice

  • 16 oz Orange juice cold

  • Cook the Eggs: Melt the butter in a nonstick pan over medium heat. Add the eggs into the skillet (sunny side up, over easy or scrambled, depending on preference). Cook to your desired doneness.

  • Serve: Serve the huevos rancheros warm with fruit and orange juice.
