Ingredients
Raisin Bran Muffins
- ½ cup All-purpose flour
- ¼ cup Whole wheat flour
- 1 tsp Baking powder
- ¼ tsp Baking soda
- ¼ tsp Salt
- ½ tsp Ground cinnamon
- ½ cup Raisins
- ½ cup Milk your choice (e.g. oat dairy or almond)
- ¼ cup Honey or maple syrup
- 1 large Egg
- 2 TBSP Vegetable oil or melted coconut oil
- ½ tsp Vanilla extract
Fruit
- 1 cup Mixed fresh fruit such as berries sliced banana or apple slices
Milk
- 16 oz Oat milk cold
Instructions
- Preheat the oven: Set to 375°F (190°C). Line 4 wells of a muffin tin with paper liners or grease lightly.
- Mix dry ingredients: In a medium bowl, combine all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and ground cinnamon. Stir in raisins and set aside.
- Mix wet ingredients: In a separate bowl, whisk together milk, honey or maple syrup, egg, oil, and vanilla extract until smooth.
- Combine batter: Pour the wet mixture into the dry mixture and stir gently with a spatula until just combined. Do not overmix; the batter should be slightly lumpy.
- Fill muffin wells: Divide the batter evenly between the 4 prepared muffin wells, filling each about ¾ full.
- Bake: Place in the preheated oven and bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the tin for 5 minutes, then transfer to a wire rack.
- Prepare fruit: Rinse and slice fruit as needed. Divide between two bowls or plates.
- Pour milk: Divide oat milk into two glasses.
- Serve: Plate one muffin per person with fruit on the side. Serve with cold oat milk. Enjoy!
