Black Bean Breakfast Burrito
- 2 tsp Butter
- ¼ cup Red onion finely diced
- ¼ cup Green bell pepper finely diced
- 4 Eggs beaten
- ⅛ tsp Salt
- ⅛ tsp Black pepper
To Serve
- ½ cup Mexican cheese blend optional
- ½ cup Black beans drained and rinsed
- 2 Whole grain tortillas 8-10 inch
Fruit
- 1 cup Fresh fruit (e.g., pineapple chunks, berries, or apple slices)
Orange Juice
- 16 oz Orange juice cold
Instructions
- Heat butter in a medium nonstick skillet over medium heat. Add diced red onion and pepper, sauté until softened, about 2 minutes.
- Add the eggs and cook, stirring, until just set, about 2-3 minutes. Remove from heat. Season with salt and pepper.
- Warm tortillas: Heat whole wheat tortillas in a skillet over medium heat for 15-20 seconds per side, or microwave them wrapped in a damp paper towel for 20 seconds, until pliable.
- Assemble burritos: Lay each tortilla flat. Portion the eggs and black beans down the center. Top with cheese optional. Fold in the sides and roll up. Cut in half.
- Serve: the burrito with fruit and OJ on the side.
