Ingredients
Peanut Butter Cookie Dough Overnight Oats
- 2 Dates pitted and chopped
- ¾ cup Almond milk
- ¾ cup Old-fashioned oats
- ½ cup Greek yogurt
- 2 TBSP Peanut butter
- 1 tsp Vanilla extract
- ⅛ tsp Salt
- 1 TBSP Cacao powder
- 1/2 - 1 TBSP Honey or maple syrup optional to taste
- 1 ½ oz Dark chocolate chips
Fruit
- 1 cup Fresh fruit (e.g. strawberries bananas or blueberries)
Green Tea
- 8 oz Water
- 2 bags Green tea
Instructions
- Chop the dates: Finely chop the pitted dates to ensure they blend smoothly.
- Blend the base: In a blender, combine the chopped dates, almond milk, rolled oats, Greek yogurt, peanut butter, vanilla extract, salt, and cacao powder. Process for 1-2 minutes until the mixture is smooth and the dates are fully broken down.
- Adjust sweetness: Taste the mixture. If desired, add honey or maple syrup and blend briefly to incorporate, adjusting to your preferred sweetness.
- Add chocolate: Transfer the mixture to a medium bowl. Stir in chocolate chips until evenly distributed.
- Divide and chill: Portion into jars or containers (8-10 oz each, about 1 cup per serving). Cover and refrigerate for at least 8 hours, or up to 4 days.
- Make Green tea: In a small saucepan, bring water to a boil over medium-high heat (about 2-3 minutes). Remove from heat, add green tea bags and steep for 2-3 minutes. (Don’t steep too much—green tea gets bitter fast.) Add sweetener of choice optional.
- Serve: overnight oats with fruit and green tea.
