Ingredients

Tomato and Onion:

  • 2 slices Your choice of bread
  • ½ cup Cottage cheese
  • 1 Tomato small diced
  • 2 TBSP Red onion chopped
  • ½ tsp Extra-virgin olive oil
  • ¼ tsp Dried oregano
  • Salt to taste
  • Black pepper to taste

Lox:

  • 2 slices Your choice of bread
  • ½ cup Cottage cheese
  • 2 oz Lox smoked salmon, chopped
  • 2 TBSP Red onion chopped
  • 1 tsp Fresh dill roughly chopped
  • Salt to taste
  • Black pepper to taste

White Grape Juice

  • 16 oz White grape juice cold

Fruit

  • 1 cup Mixed fresh fruit such as berries banana kiwi prepare accordingly

Instructions

  • Toast the Bread: Toast each slice of bread to your preferred crispness.
  • Spread Cottage Cheese: Evenly spread ¼ cup of cottage cheese over each slice of toast.
  • Assemble the Tomato and Onion Toast: Distribute diced tomato and chopped onion over the cottage cheese. Drizzle with extra-virgin olive oil. Sprinkle with salt, black pepper, and dried oregano to taste.
  • Assemble the Lox Toast: Top cottage cheese with chopped lox, red onion, and fresh dill. Season with salt and black pepper to taste.
  • Serve: Plate the toast with the fresh fruit. Pour chilled white grape juice into glasses. Enjoy your breakfast!
