Ingredients
Split Pea Soup
- ½ cup Dried split peas rinsed
- ½ cup Onion diced
- 1 cup Carrot diced
- 1 stalk Celery diced
- 3 cloves Garlic minced
- 4 cups Chicken broth
- ¼ tsp Dried thyme
- ¼ tsp Black pepper
- 1 Bay leaf
- Salt to taste
- Black pepper to taste
Banana Cream Pie
- 1 TBSP Butter melted
- 4 TBSP Graham cracker crumbs
- ¼ tsp Vanilla extract
- 2 TBSP Half and half
- 1 Banana sliced
- 2 TBSP Sugar
- ½ tsp Cornstarch
- 1 Egg yolk
- ¼ cup Heavy cream whipped
Grilled Ham Sandwich
- 4 slices Your choice of bread
- 4 oz Deli ham
- 4 slices Your choice of cheese
- 2 TBSP Butter
Mango Lassi
- 1½ cups Frozen mango chopped
- ¾ cup Plain yogurt
- ¾ cup Milk
- ¼ tsp Ground cardamom
- 1 TBSP Sugar to taste
Instructions
- Prepare Split Pea Soup In a slow cooker, combine split peas, onion, carrot, celery, garlic, vegetable or chicken broth, dried thyme, black pepper, and bay leaf. Cover and cook on low heat for 8 hours until peas are tender. Season with additional salt and pepper as needed. Remove bay leaf before serving.
- Prepare Banana Cream Pie Preheat oven to 375°F. Combine melted butter, graham cracker crumbs, and vanilla extract. Press mixture firmly into a 5x7 baking dish. Bake crust for 8–10 minutes, then remove and cool.
- In a saucepan, whisk half and half, sliced banana, sugar, cornstarch, and egg yolk until smooth. Cook over medium heat, whisking continuously, until mixture thickens. Allow filling to cool slightly, then pour evenly over crust. Refrigerate pie for 1 hour. Before serving, top pie with whipped cream.
- Prepare Grilled Ham Sandwich Butter one side of each bread slice. Layer cheese and ham between bread slices, with buttered sides outward. Heat a skillet or griddle over medium heat and cook sandwiches until golden brown on each side and cheese melts, approximately 3-4 minutes per side. Slice diagonally to serve.
- Prepare Mango lassi Blend all the ingredients in a blender until smoooth. Adjust sweetness as desired.
- Serve Split Pea Soup with Grilled Ham Sandwich, mango lassi, and Banana Cream Pie.
