Pulled Pork Sandwich

Ingredients

Cucumber Water:

  • 8 slices Cucumber
  • 24 oz Water
  • Ice cubes

Sandwich

  • 1 TBSP Extra-virgin olive oil
  • 1 cup Onion thinly sliced
  • 1 Poblano pepper sliced
  • 6 oz Pulled pork
  • 2 slices Swiss cheese
  • 4 TBSP BBQ sauce
  • 2 Brioche buns
  • Salt to taste
  • Black pepper to taste
  • 2 oz Potato chips
  • 2 Pickle spears

Instructions

  • Cucumber Water: Place the cucumber slices in the water and allow to infuse in the refrigerator until ready to serve. Serve over ice if desired.
  • Sauté Onions and Poblano Peppers: Heat olive oil in a pan over medium heat. Add the sliced onion and poblano pepper. Sauté for about 5-7 minutes, until the vegetables are softened and slightly caramelized. Season with salt and pepper.
  • Reheat Pulled Pork: heat the pulled pork along witht he bbq sauce in a separate pan until warmed through.
  • Toast Brioche Buns: Toast the brioche buns in a separate pan or toaster until golden brown.
  • Assemble Sandwiches: layer the swiss cheese, pulled pork and onions and peppers onto the bun.Place the top half of the brioche bun on the sandwich.
  • Serve with potato chips, pickle spears, and cucumber water.
