Ingredients
Sloppy Joes
- 1 tsp Extra-virgin olive oil
- ½ cup Onion finely chopped
- 1 clove Garlic minced
- 8 oz Ground beef
- Salt to taste
- Black pepper to taste
- 1 TBSP Tomato paste
- ¼ cup Ketchup
- 1 TBSP Mustard
- 1 tsp Worcestershire sauce
- 1 tsp Brown sugar
- 2 Hamburger buns
Persian Cucumber Salad
- 2 cups Cucumbers thinly sliced
- ½ Avocado diced
- 1 TBSP Fresh dill chopped
- 1 TBSP Fresh mint chopped
- 1 TBSP Extra-virgin olive oil
- 1 TBSP Lemon juice
- ⅓ cup Walnuts chopped
- 1/4 cup Feta cheese crumbled
- Salt to taste
- Black pepper to taste
Pineapple Orange Juice Spritzer
- ½ cup Pineapple juice
- ½ cup Orange juice
- 1 cup Sparkling water
- Ice cubes
Instructions
- Prepare the Sloppy Joe Filling: Heat olive oil in a skillet over medium heat. Sauté the chopped onion for 2-3 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
- Add ground beef, season with salt and pepper, and cook until nicely browned.
- Stir in tomato paste, ketchup, mustard, Worcestershire sauce, and brown sugar. Simmer for 5 minutes until the sauce thickens slightly.
- Toast the Buns: While the filling simmers, toast the hamburger buns in a dry skillet or toaster until golden brown.
- Make the Persian Cucumber Salad: In a bowl, combine all of the ingredients and mix until combined. Set aside.
- Prepare the Pineapple Orange Juice Spritzer: In a pitcher, mix pineapple juice and orange juice. Add sparkling water and gently stir. Serve over ice cubes and garnish with an orange slice if desired.
- Assemble and Serve: Spoon the sloppy joe mixture onto the toasted buns. Serve with the cucumber salad on the side and the spritzer.
