Ingredients

  • 1 tbsp Extra-virgin olive oil
  • 2 tbsp Onion minced
  • 2 tbsp Celery diced very small
  • 2 tbsp Carrots diced very small
  • 1/4 cup White rice rinsed
  • 1/2 tbsp Fresh parsley chopped

Instructions

  • Heat the oil in a pot on medium heat. Saute the onion, celery, and carrots until the onions start to soften.
  • Add the rice and recommended amount of water according to the directions on the package (or substitute chicken broth for more flavor). Cook according to the directions on the package.
  • Once cooked season with salt and pepper to taste. Garnish with parsley.
