Ingredients

  • 2 tbsp Extra-virgin olive oil
  • 12 oz Deli roast beef chopped
  • 1 Green bell pepper seeds and stem removed and cut into thin strips
  • 1/2 Onion sliced into strips
  • 4 oz Mushrooms sliced
  • 4 Whole wheat tortilla
  • 4 oz Provolone cheese
  • ketchup or mustard (optional)

Instructions

  • Preheat the oven to 400 degrees
  • Heat the oil in a nonstick pan over medium heat. Add the peppers, onion, and mushrooms and cook for 4 - 6 minutes or until the vegetables are soft. Add in the beef and cook until lightly browned.
  • Layer the wrap with cheese, mushroom, onion, pepper, and beef. Season with salt and pepper to taste. Fold in the ends and roll up. Place on a baking sheet and place into the oven for 4 - 6 minutes until the cheese is melted. Cut in half and serve with ketchup or mustard on the side if you desire.
