Ingredients
- 3/4 cup Israeli couscous
- 1.5 cup chicken broth
- 3 tbsp greek yogurt
- 1/2 Carrot peeled and shredded
- 2 tbsp dill chopped
Instructions
- Rinse couscous under cold water until water runs clear.
- In a saucepan over medium heat, bring the broth to a boil. Add couscous and simmer for 8 - 10 minutes, remove from heat and cover with a lid. Let sit for 10 minutes, then fluff with a fork. Drain excess broth if needed. Then run under cold water to cool.
- Once cool, mix in the yogurt, carrot, and dill. Season with a pinch of salt and pepper to taste and serve.
