Ingredients
Fried Chicken
- 2 cups Buttermilk
- 2 TBSP Hot sauce
- 2 Chicken thighs skin-on bone-in
- 2 Chicken drumstick
- 2 cups All-purpose flour
- 1 TBSP Dried oregano
- 1 tsp Paprika
- 4 cups Vegetable oil or your preferred high smoke point oil
- 2 Dinner rolls
Seasoning
- Salt to taste
- Black pepper to taste
Steamed Broccoli
- 2 cups Broccoli cut into bite sized florets
- 2 TBSP Butter
Sauce
- 3 TBSP Yellow mustard
- 1 TBSP Honey
- 2 tsp Hot sauce
Lemonade
- 24 oz Lemonade cold
Instructions
- In a medium bowl, mix together the buttermilk and hot sauce. Add the chicken and soak for 20 minutes. While the chicken is marinating, prep the broccoli.
- In a bowl, mix flour, oregano, paprika, salt, and pepper.
- Heat the oil in a pot or heavy-bottomed cast iron skillet over medium heat to 325°F (162°C). While the oil is heating, coat the chicken.
- Dip the chicken in the flour mixture to coat thoroughly, then back into the buttermilk mixture, and then again into the flour mixture using your hands to pack on flour, coating very well.
- Fry the chicken: Working in batches if needed, add the chicken and fry on one side for 8-10 minutes, then use tongs to turn the pieces over and fry for another 6-8 minutes, until golden brown or until an internal temperature of 160°F (71°C) is reached (to check the internal temperature, carefully remove the chicken from the oil onto a paper towel and probe the fattest part of the muscle with a thermometer). Once cooked, set on a paper towel to drain any excess oil.
- For the broccoli: Fill a pot with salted water and set over high heat until boiling.
- Preheat the oven to 350 °F (176 °C). Warm the roll for 2 to 3 minutes. Spread with butter if desired.
- Cook the broccoli: Add the broccoli to the pot of boiling water, and simmer until tender, about 5 minutes.
- Finish the broccoli: Drain well. In a bowl, toss with butter and season with salt to taste.
- For the sauce: mix all ingredients together in a bowl until combined.
- Serve: Enjoy fried chicken with sauce, broccoli, roll, and lemonade.
