Ingredients
Marinade
- 1 TBSP Extra-virgin olive oil
- 3 TBSP Lime juice
- 3 TBSP Reduced-sodium soy sauce
- 4 cloves Garlic minced
- 2 tsp Chili powder
- 1 tsp Ground cumin
- 1 tsp Dried oregano
Tacos
- 8 oz Flank steak
- 1/2 cup Arugula
- 2 TBSP Red onion diced
- 1/2 cup Tomato diced
- 8 slices JalapeƱo pepper sliced thin (optional)
- 1/2 Lime cut into wedges
- 6 Corn Tortillas street taco size
Sauce
- 2 TBSP Fresh parsley
- 2 TBSP Fresh cilantro
- 1 clove Garlic
- 1 tsp Lime juice
- 2 TBSP Extra-virgin olive oil more if needed
Guacamole
- 1 Avocados pitted
- 1 TBSP Fresh cilantro chopped
- 1 clove Garlic minced
- 1 TBSP Sour cream
- 1/2 tsp Smoked paprika
- 2 oz Tortilla chips
Agua Fresca
- 16 oz Water cold
- 8 oz Orange juice
- 2 tsp Lemon juice
- 1/4 cup Fresh mint
- 2 tsp Sugar to taste
Instructions
- Make the marinade: Whisk all ingredients together in a large bowl.
- Marinate steak: Place steak into the marinade mixture; toss to coat the steak in the marinade. Cover bowl and place in refrigerator. Let steak marinade for 30 minutes or up to 12 hours.
- Prep the ingredients per the instructions above.
- Make the sauce: Place all ingredients in a blender, and pulse until blended well. Add more oil if needed for a smooth consistency.
- Make the guacamole: Mash the avocado with a fork until it is smooth. Stir in the cilantro, garlic, and sour cream. Season with salt and pepper to taste. Sprinkle with smoked paprika.
- Make the agua fresca: mix all ingredients together. Refrigerate until ready to serve. Serve over ice if desired.
- Heat a grill or grill pan on medium heat.
- Cook steak: Grill the steak on both sides until it reaches your desired temperature (see below). Set the steak aside to rest for 5 minutes before slicing thin against the grain.
- Lightly grill the tortilla shells on each side to warm.
- Serve: Layer the tortilla shells with arugula, steak, tomato, onion, and jalapeno then drizzle with sauce. Enjoy with lime wedges, chips, guacamole, and agua fresca.

- Medium Rare: 125 - 130 degrees F
- Medium: 135 - 140 degrees F
- Medium Well: 145 - 150 degrees F
