Ingredients

Avocado Toast

  • 1 Avocados Peeled & Pitted
  • 1 clove Garlic minced
  • 1/4 tsp Lime juice to taste
  • Salt to taste
  • Black pepper to taste
  • 1 tsp Extra-virgin olive oil
  • 6 oz Canadian bacon (slices)
  • 2 Slices Sourdough bread toasted (or bread of your preference)
  • ½ tsp Red pepper flakes (Optional)
  • 2 TBSP Butter
  • 4 Eggs beaten

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • In a bowl, mash the avocado with a fork until smooth. Mix in the garlic and lime to taste to give it some brightness but not overpower. Season with salt and pepper to taste. Toast the bread and spread the avocado mixture on top. Sprinkle with red pepper flakes if desired.
  • Heat the oil in a nonstick pan over medium heat. Cook the Canadian bacon on both sides until nicely golden brown. Set aside.
  • Heat a nonstick pan over medium heat. Add the butter and eggs to the pan. Move the eggs using circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from cooking too quickly and overcooking or drying out). Remove the pan from the heat while the eggs are still moist. Season with salt and pepper to taste.
  • Serve the eggs with avocado toast, Canadian bacon, and orange juice.
