Ingredients
- 5 oz Chicken breast boneless skinless
- 1/2 tbsp Chicken Seasoning rub your favorite chicken seasoning blend
- 2 tbsp Extra-virgin olive oil
- 1 tsp Red wine vinegar
- 1/4 tsp Lemon juice
- 2 tbsp Celery diced small
- 2 tbsp Red onion diced fine
- 2 tbsp Cucumber diced small
- 2 tbsp Kalamata olives pitted and chopped
- 1/4 cup Grape tomatoes diced
- 2 tbsp Feta cheese
- 2 Tortilla wraps store bought or make your own (see recipe)
- 2 Pickle spears
Instructions
- Preheat a grill pan on medium heat. Season the chicken on both sides with seasoning rub on both sides. Grill the chicken on both sides to get nice caramelized markings. The transfer the pan to the oven and cook to an internal temperature of 160 degrees using a thermometer. Let rest for 5 minutes before cutting into bite sized pieces.
- In a bowl, mix together the chicken, oil, vinegar, lemon juice, celery, onion, cucumber, olives, tomatoes, and feta. Season with salt and pepper to taste. Be careful not to add too much lemon.
- Place the mixture on the wrap, fold in one or both ends and roll up tightly.
- Serve with pickle.
