Fire Roasted Tomato Baked Eggs

Ingredients

  • 1 tsp Butter
  • 2 tsp Extra-virgin olive oil
  • 2 tbsp Red onion minced
  • 3 tbsp Heavy cream
  • 2 tsp Parmesan cheese
  • 3 tbsp Fire roasted tomatoes
  • 4 Eggs
  • 2 slices Sourdough bread toasted and buttered if desired
  • 1 Orange peeled and sectioned (Check the Fruit guide to substitute seasonal fruits)
  • 1 tbsp Scallions chopped

Instructions

  • Preheat the oven to 375 degrees.
  • Melt the butter and oil in an oven safe nonstick pan on medium heat. Saute the onion until softened. Stir in the cream, parmesan, and tomatoes. Remove from the heat then carefully crack the eggs in. Season with salt and pepper.
  • Place the pan in the oven and cook for about 6 to 10 minutes until the whites of the egg are firm but the yolk is soft.
  • Portion and serve with toast and orange. Garnish with scallion.
