Ingredients

Dressing

  • 2 Tbsp Extra-virgin olive oil
  • 1/2 Tbsp Red wine vinegar
  • 1/2 clove Garlic grated
  • 1/4 tsp Dried oregano
  • 1/4 tsp Dijon mustard

Salad

  • 1/2 lb Chicken breast boneless skinless
  • 1/2 tbsp Montreal chicken seasoning or your preferred poultry spice blend
  • 1 tbsp Extra-virgin olive oil
  • 4 cups Romaine lettuce chopped
  • 8 Grape tomatoes halved
  • 1/3 cup Cucumber chopped
  • 2 tbsp Red onion sliced
  • 1/4 cup Kalamata olives halved
  • 2 tsp Feta cheese

Pita and Hummus

  • 1 Pita bread cut into wedges
  • 4 tbsp Hummus use your favorite kind

Instructions

  • In a bowl whisk together all of the ingredients for the dressing and store in the refrigerator until ready to use.
  • Preheat the oven to 350 degrees. Season the chicken well on both sides with chicken seasoning.
  • Heat an oven safe nonstick pan on medium heat. Once hot add the oil. Brown the chicken well on both sides. Place the pan in the oven and cook to an internal temperature of 160 degrees using a thermometer. Once cooked set aside to rest for 5 minutes before dicing into bite sized pieces.
  • Cook the pita in the oven until golden brown and crisp.
  • Lay down the lettuce, top with tomatoes, cucumber, onion, olives, chicken, and feta. Whisk the dressing and drizzle over top; serve with pita and hummus.
