Ingredients
- 4 oz Linguine pasta
- 2 tbsp Extra-virgin olive oil plus 1 to 2 teaspoons for the shrimp
- 3 clove Garlic minced
- 2 tbsp Green bell pepper diced small
- 2 tbsp Red onion diced small
- 1 cup Cannellini beans with the liquid from the can
- 1 tbsp Cajun seasoning
- 1/4 cup Tomato diced
- 1 tsp Lemon juice
- 1/2 tsp Fresh thyme minced
- 1/2 cup Chicken broth
- 1/2 lb Shrimp peeled and deveined
- 2 slices Crusty bread
- 2 tbsp Fresh parsley
Instructions
- In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
- Heat a nonstick pan over medium heat. Once hot, add the oil. Saute the garlic, peppers, and onion until soft. Then stir in the beans, 3/4 of the cajun seasoning, tomato, lemon juice, thyme, and broth. Bring to a low simmer, stirring occasionally until the sauce reduces and builds flavor.
- Season the shrimp on both sides with remaining Cajun seasoning, salt and pepper. Heat a saute pan on medium heat. Once hot, add 1 to 2 teaspoons of oil. Sear the shrimp on both sides golden brown to an internal temperature of 120 degrees using a thermometer. Remove from the pan and set aside.
- Toss the pasta in the sauce and serve with shrimp and bread. Garnish with parsley.
