Ingredients

  • 4 oz Linguine pasta
  • 2 tbsp Extra-virgin olive oil plus 1 to 2 teaspoons for the shrimp
  • 3 clove Garlic minced
  • 2 tbsp Green bell pepper diced small
  • 2 tbsp Red onion diced small
  • 1 cup Cannellini beans with the liquid from the can
  • 1 tbsp Cajun seasoning
  • 1/4 cup Tomato diced
  • 1 tsp Lemon juice
  • 1/2 tsp Fresh thyme minced
  • 1/2 cup Chicken broth
  • 1/2 lb Shrimp peeled and deveined
  • 2 slices Crusty bread
  • 2 tbsp Fresh parsley

Instructions

  • In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
  • Heat a nonstick pan over medium heat. Once hot, add the oil. Saute the garlic, peppers, and onion until soft. Then stir in the beans, 3/4 of the cajun seasoning, tomato, lemon juice, thyme, and broth. Bring to a low simmer, stirring occasionally until the sauce reduces and builds flavor.
  • Season the shrimp on both sides with remaining Cajun seasoning, salt and pepper. Heat a saute pan on medium heat. Once hot, add 1 to 2 teaspoons of oil. Sear the shrimp on both sides golden brown to an internal temperature of 120 degrees using a thermometer. Remove from the pan and set aside.
  • Toss the pasta in the sauce and serve with shrimp and bread. Garnish with parsley.
