Ingredients

  • Nonstick spray
  • 1 tbsp Extra-virgin olive oil
  • 1 cup Mushrooms chopped
  • 2 tbsp Red onion diced
  • 2 cloves Garlic minced
  • 1/2 pound Ground chicken
  • 1/2 tsp Montreal chicken seasoning or chicken seasoning blend of your choice
  • 1 tsp Paprika
  • 8 Grape tomatoes halved
  • 1/4 cup Crumbled blue cheese
  • 2 Tomato Basil Tortilla wraps or wrap of your choice
  • 1 cup Baby spinach
  • 1 oz Potato chips
  • 2 Pickle spears

Ailoi

  • 2 tbsp Mayonnaise
  • 1/4 tsp Chipotle Sauce use more or less as desired to taste

Instructions

  • Preheat a panini style grill. Lightly grease with nonstick spray.
  • Heat a non-stick pan over medium heat. Once hot, add the oil. Saute the mushrooms, onion, and garlic until they start to soften. Add in the chicken, seasonings, and paprika. Season well with salt and pepper and saute, breaking it up into smaller pieces until no longer pink. Stir in the grape tomatoes and blue cheese. Continue to cook until everything is soft and well blended then remove from heat.
  • In a bowl mix together the mayo and chipotle. Then spread onto the wrap. Layer the spinach and chicken mixture onto the wrap, (drain any moisture from the chicken mixture beforehand to avoid incorporating it in the wrap). Fold in the ends and roll up tightly.
  • Cook on the panini grill until golden brown on both sides.
    (Alternatively, cook in a nonstick pan on medium heat until both sides are golden brown)
  • Cut in half and serve with chips and pickles.
