Ingredients
- 6 oz Chicken breast boneless skinless
- 1/2 tbsp Montreal chicken seasoning or your preferred poultry spice blend
- 1 tbsp Extra-virgin olive oil
- 1 cup Spring mix
- 3 slices Tomatoes
- 3 slices Sourdough bread lightly toasted, square slices will work best
- 1/2 Avocado sliced
- Buffalo wing sauce
- 2 Pickle spears
- 1 oz Potato chips
Instructions
- Preheat the oven to 350 degrees. Season the chicken well on both sides with chicken seasoning.
- Heat an oven safe nonstick pan on medium heat. Once hot add the oil. Brown the chicken well on both sides. Place the pan in the oven and cook to an internal temperature of 160 degrees using a thermometer. Once cooked set aside to rest for 5 minutes before dicing into bite sized pieces.
- Place the spring mix and tomato on one slice of bread, place another slice of bread on top with chicken and avocado, drizzle with sauce and top with a final piece of bread.
- Cut diagonally from corner to corner to create 4 triangle pieces. Place the toothpicks in to hold each one together. Serve 2 pieces of sandwich per portion or full sandwich if desired. Serve with pickles and chips.
