Mediterranean Baked Eggs

Ingredients

  • 2 tsp Butter
  • 3 tbsp Heavy cream
  • 6 slices Tomato sliced thin
  • 4 Eggs
  • 1/4 tsp Dried oregano
  • 2 tbsp Red onion sliced thin or shaved
  • 2 slices Sourdough bread toasted and halved
  • 2 tsp Extra-virgin olive oil
  • 1 Apple sliced (Check the Fruit guide to substitute seasonal fruits)
  • 1 tsp Fresh parsley chopped

Instructions

  • Preheat the oven to 375 degrees.
  • Melt the butter in an oven safe nonstick pan on medium heat. Add the cream and layer in the tomatoes. Remove from the heat then carefully crack the eggs in. Season with oregano, salt and pepper. Top with onion.
  • Place the pan in the oven and cook for about 8 minutes until the whites of the egg are firm but the yolk is soft.
  • Portion, drizzle the toast with a little olive oil, serve with apple. Garnish with parsley.
