Ingredients

  • 2 Flat bread individual sized flatbread (depending on size available)
  • 1 tsp Extra-virgin olive oil
  • 4 oz Chicken sausage links chopped fine
  • 4 Eggs beaten
  • 1/4 cup White cheddar cheese grated
  • 1/4 cup Tomato diced small
  • 1/2 tbsp Red onion minced
  • 1 tsp Jalapeño pepper minced for garnish (optional)
  • 1 Pears sliced (Check the Fruit guide to substitute seasonal fruits

Instructions

  • Heat a non-stick pan over medium heat. Warm the flatbread on both sides until warm and soft. Then set aside.
  • Add the oil and chicken sausage to the pan. Saute until nicely browned. Then add the eggs. Move the eggs using circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from cooking too quickly and overcooking or drying out). Remove the pan from the heat while the eggs are still moist.  Season with salt and pepper to taste.
  • Portion the eggs onto the flatbread. Finely grate the cheese over top. Garnish with tomato, onion, and jalapeno (if using).
  • Serve with pear.
