Asian Street Tacos

Ingredients

  • 1/2 lb Ground turkey
  • 2 tbsp Reduced-sodium soy sauce
  • 6 Street Taco Shells about 3 inches in diameter, trim down larger taco shells to fit that specification if needed
  • 1 tbsp Peanuts chopped
  • 2 tsp Hot sauce
  • 2 tbsp Fresh cilantro garnish
  • 1/2 cup Kimchi use store bought or make your own (see recipe)
  • 1 oz Tortilla chips hint of lime flavored tortilla chips or your preference

Slaw

  • 1/4 cup Cucumber cut into match sticks
  • 1/4 cup Carrots shredded
  • 1 tsp Fresh ginger minced
  • 1/2 tsp Lime juice more if needed
  • 1/4 tsp Honey

Instructions

  • Mix all the ingredients for the slaw in a bowl. Season with salt and pepper to taste. Adjust the lime and honey as needed. Set aside.
  • Heat a nonstick pan on medium heat. Once hot, crumble the turkey into the pan while breaking it up into smaller pieces. Once it starts to brown stir in the soy sauce. Cook until no longer pink. Season with salt and pepper as needed.
  • In a nonstick pan on medium heat warm the taco shells on both sides.
  • Spoon the turkey onto the taco shells. Top with slaw and peanuts. Drizzle with hot sauce. Garnish with cilantro. Serve with kimchi and tortilla chips.
