Ingredients
- 6 oz Breakfast sausage links
- 2 tsp Extra-virgin olive oil plus more for finishing
- 2 tbsp Red onion minced
- 1/2 cup Heavy cream
- 8 Eggs
- 3/4 cup Grape tomatoes quartered
- 1/2 Avocado pitted and diced
- 2 slices Sourdough bread toasted and halved
- 1 Apple sliced (Check the Fruit guide to substitute seasonal fruits)
- 2 tbsp Fresh cilantro chopped
Instructions
- Preheat the oven to 375 degrees.
- Cook the sausage in the oven to an internal temperature of 155°F using a thermometer.
- Heat an oven safe nonstick pan on medium heat. Once hot, add the oil. Saute the onion until it starts to soften. Add the cream into the pan and bring to a simmer. Remove from the heat then carefully crack the eggs in. Top with tomatoes and avocado.
- Place the pan in the oven and cook for about 8 minutes until the whites of the egg are firm but the yolk is soft. Season with salt and pepper.
- Portion, drizzle with a little olive oil, serve with toast and apple. Garnish with cilantro.
