Ingredients
- 8 slices Beefsteak Tomatoes
- 4 Slices Sourdough bread toasted (or bread of your preference)
- 4 tbsp Extra-virgin olive oil plus more as needed
- ½ tsp Red pepper flakes (Optional)
- 8 Eggs beaten
- 2 tbsp Fresh sage Chopped
- 1 Apple sliced (Check the Fruit guide to substitute seasonal fruits)
Instructions
- Preheat the oven broiler on low.
- Place the tomato slices on the bread, drizzle with a little oil, season with salt and pepper. Place under the broiler until the tomatoes start to soften, about 5 minutes. Drizzle with more oil before serving, sprinkle with red pepper flakes (if desired).
- Preheat a non-stick pan over low-medium heat. Once hot, add oil. Move the eggs using circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from cooking too quickly and overcooking or drying out). Remove the pan from the heat while the eggs are still moist. Season with salt and pepper to taste.
- Serve the toast with eggs and garnish with sage. Serve with apple.
