Ingredients
- 1 Zucchini
- 1/4 Red bell pepper
- 2 tbsp Extra-virgin olive oil
- 4 Fresh chives
Instructions
- Preheat the oven to 350 degrees.
- Cut the ends off the zucchini, then slice the green outer part into 2 inch long match sticks. Discard the inside where the seeds are. Cut the pepper into 2 inch long match sticks also. Mix the zucchini, pepper, oil, and season with salt and pepper. Place them into separate even portions. Using a chive tie each portion into bundles. Then place them on a foil lined baking sheet.
- Cook in the oven until tender but still somewhat firm, about 10 to 15 minutes. Then serve.
