Ingredients
- 6 oz Italian sausage link
- 2 tsp Extra-virgin olive oil
- 2 tbsp Red onion chopped
- 1 tbsp Butter
- 8 Eggs beaten
- 1/4 cup Scallions chopped
- 1/2 cup Mozzarella cheese shredded
- 8 slices Sourdough bread lightly toasted, or bread of your choice
- 1 Mango peeled and diced (Check the Fruit guide to substitute seasonal fruits)
Instructions
- Preheat the oven to 400 degrees. Place the sausage on a foil lined baking sheet. Cook in the oven until crisp to an internal temperature of 150 degrees using a thermometer.
- Heat a nonstick pan over medium heat. Once hot, add the oil and onion. Add in the butter, eggs, scallions, and cheese. Move the eggs using circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from overcooking or drying out). Remove the pan from the heat while the eggs are still moist. Season with salt and pepper to taste.
- Portion the eggs onto the bread. Cut in half and serve with sausage and mango.
