Ingredients
- 2 Tomatoes cut into large wedges
- 1/4 cup Red onion roughly chopped
- 4 cloves Garlic whole
- 2 tbsp Extra-virgin olive oil
- 1/2 cup Cucumber cut into chunks
- 1 tbsp Tomato paste
- 2 tsp Worcestershire sauce
- 3 tbsp Fresh cilantro
- 1/4 cup Fresh basil plus more for garnish
- 2 tsp Lime juice
- Jalapeño pepper sliced thin (optional for garnish)
Instructions
- Preheat the oven broiler on low. Toss the tomato, onion, and garlic with olive oil on a foil lined baking sheet. Season well with salt and pepper. Place under the broiler until the tomatoes are soft and garlic is golden brown.
- Place all ingredients (minus the jalepeno) into a blender or food processor and blend until smooth. Refrigerate in a shallow bowl or container until cool. Season with salt and pepper to taste before serving. Garnish with basil and jalapeno (if using).
