Ingredients
- 8 oz Smoked beef sausage
- 2 tsp Butter
- 8 Eggs
- 2 tbsp Scallions chopped
- 1/3 cup Fresh mozzarella cut into small chunks
- 4 slices Sourdough bread lightly toasted (lightly drizzled with olive oil if desired)
- 2 Apple sliced (Check the Fruit guide to substitute seasonal fruits)
- Red pepper flakes optional
Instructions
- For the sausage: cook in a 400°F oven until browned on all sides to an internal temperature of 155°F using a thermometer.
- Heat a nonstick pan on medium heat. Add the butter, eggs, scallions, and cheese into the pan. Move the eggs using circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from cooking too quickly and overcooking or drying out). Remove the pan from the heat while the eggs are still moist. Season with salt and pepper to taste.
- Serve the eggs with sausage, toast, and apple. Sprinkle with red pepper flakes if desired.
