Ingredients

  • 1 tbsp Extra-virgin olive oil
  • 2 tbsp Onion minced
  • 1/4 cup Celery diced very small
  • 1/4 cup Carrots diced very small
  • 1/2 cup Orzo pasta rinsed
  • 2 cups Chicken broth
  • 2 tbsp Parmesan cheese grated

Instructions

  • Heat the oil in a pot on medium heat. Saute the onion, celery, and carrots for about 3 minutes.
  • Add the orzo and broth. Season with salt and pepper. Cook the orzo according to the directions on the package. Once tender, drain any excess broth if needed. Stir in the parmesan.
  • Season with salt and pepper to taste.
