Goat Cheese Toast

Ingredients

  • 6 oz Chicken sausage links
  • 8 tbsp Goat cheese or more if desired
  • 4 Slices Sourdough bread (or bread of your preference)
  • 1/4 cup Sun dried tomatoes sliced, plus some of the oil from the can or jar for drizzling
  • 2 tbsp Fresh sage chopped
  • 2 tsp Extra-virgin olive oil
  • 8 Eggs
  • 1.5 cups Blackberries (Check the Fruit guide to substitute seasonal fruits)

Instructions

  • For the chicken sausage: If raw, cook in a 400°F oven to an internal temperature of 160°F using a thermometer. 
    If already cooked: Place in a 400 degree oven until warmed through or slice and brown in a nonstick pan on medium heat.
  • Preheat the oven broiler on low.
  • Place the goat cheese on each slice of bread in chunks, it will become spreadable once hot. Place underneath the broiler until soft then spread on the toast. Top with sun dried tomatoes and sage. Drizzle with a little of the oil from the sun dried tomatoes.
  • Preheat a non-stick pan over low-medium heat with oil. Crack eggs on a flat surface and into the pan being careful not to break the yolk. Cook until the whites of the eggs are firm and no longer runny (about 3-4 minutes). Add a tablespoon or two (as needed) of water and cover with a lid to steam the remaining egg white firm, about 1 to 2 minutes.
  • Serve the eggs with goat cheese toast, season with salt and pepper. Serve with chicken sausage and blackberries.
