Ingredients

  • 8 oz Ground turkey sausage
  • 1/2 cup Green olives chopped
  • 1 tbsp Shallot minced
  • 3 tbsp Celery minced
  • 1/4 cup Roasted red peppers chopped
  • 1 tbsp Capers rinsed and chopped
  • 2 tbsp Carrots chopped
  • 3 tbsp Extra-virgin olive oil
  • 1 tbsp Red wine vinegar
  • 2 Flat bread
  • 1 cup Baby spinach
  • 1 cup Mozzarella cheese shredded
  • Fresh parsley garnish

Instructions

  • Heat a nonstick pan on medium heat. Once hot, crumble the turkey sausage into the pan and cook until no longer pink while breaking it up into smaller pieces.
  • Preheat the oven broiler on low.
  • Combine olives, shallot, celery, red peppers, capers, carrot, and olive oil in a small bowl. Stir to combine. Season to taste with vinegar, salt, and pepper.
  • Layer the flatbread with spinach, sausage, vegetable mixture, and cheese. Place on a baking sheet and underneath the broiler until the cheese is melted and the flatbread is golden brown around the edges.
  • Cut into wedges and garnish with parsley.
