Ingredients
- 8 oz Ground turkey sausage
- 1/2 cup Green olives chopped
- 1 tbsp Shallot minced
- 3 tbsp Celery minced
- 1/4 cup Roasted red peppers chopped
- 1 tbsp Capers rinsed and chopped
- 2 tbsp Carrots chopped
- 3 tbsp Extra-virgin olive oil
- 1 tbsp Red wine vinegar
- 2 Flat bread
- 1 cup Baby spinach
- 1 cup Mozzarella cheese shredded
- Fresh parsley garnish
Instructions
- Heat a nonstick pan on medium heat. Once hot, crumble the turkey sausage into the pan and cook until no longer pink while breaking it up into smaller pieces.
- Preheat the oven broiler on low.
- Combine olives, shallot, celery, red peppers, capers, carrot, and olive oil in a small bowl. Stir to combine. Season to taste with vinegar, salt, and pepper.
- Layer the flatbread with spinach, sausage, vegetable mixture, and cheese. Place on a baking sheet and underneath the broiler until the cheese is melted and the flatbread is golden brown around the edges.
- Cut into wedges and garnish with parsley.
