Balsamic Steak Salad

Ingredients

  • 12 oz Sirloin steaks substitute deli roast beef if desired
  • 2 tbsp Steak seasoning montreal steak seasoning or comparable brand
  • 6 cups Spring mix
  • 12 Grape tomatoes halved
  • 2 cups Corn
  • 1 cup Chickpeas
  • 1/2 cup Carrots shaved or shredded
  • 1/2 cup Red onion sliced very thin or shaved
  • 4 tbsp Crumbled blue cheese or more if desired
  • 4 Dinner rolls (or your preference of bread)

Dressing

  • 2 tbsp Extra-virgin olive oil
  • 3 cloves Garlic minced
  • 1 tbsp Balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp Honey or more if needed

Instructions

  • Preheat a skillet or non-stick pan over medium heat.
  • Season both sides of the sirloin well with steak seasoning and salt. Cook the steak on both sides to your desired temperature using a thermometer (see below). Once cooked, set aside to rest for 3-5 minutes before slicing thin against the grain.
  • Heat a nonstick pan over medium heat. Cook the corn until it develops a golden brown color.
  • Lay down the spring mix, top with tomatoes, corn, chickpeas, carrots, onion, sliced steak, and blue cheese.
  • Whisk all of the ingredients for the dressing in a bowl.
  • Drizzle the dressing over top of the salad (about 2 teaspoons of dressing per portion) and serve with bread.

Notes

Steak Internal Temperatures:
  • Rare: 115 - 120 degrees F
  • Medium Rare: 125 - 130 degrees F
  • Medium: 135 - 140 degrees F
  • Medium Well: 145 - 150 degrees F
  • Well Done: 160 degrees F
