  • Cook the oatmeal according to the instructions on the package. Season with salt to taste, cover with a lid, and set aside.
  • Heat the oil in a non-stick pan over medium heat. Add the chicken sausage and brown on all sides, pour the eggs and tomato into the pan. Move the eggs around until they start to become fluffy and firm but still moist. Remove from the heat.
  • Serve the eggs over the oatmeal, top with cheese and chives, serve with apple.
