Ingredients
Marinade
- 1/2 tsp Garlic powder
- 1/4 tsp Dried oregano
- 2 tsp Lemon juice
- 3 tbsp Extra-virgin olive oil
Salad
- 6 oz Chicken breast boneless skinless butterflied
- 2 hunks Greek bread nice big hunk
- 2 cups Tomatoes cut into bite sized chunks
- 1 cup Cucumber sliced
- 4 tbsp Red onion sliced thin
- 2/3 cup Kalamata olives halved
- 3 tbsp Feta cheese block form, crumbled
- 3 tbsp Extra-virgin olive oil
- 1/4 tsp Dried oregano
- 1 Tbsp White vinegar
Instructions
- Preheat a grill or grill pan on medium heat.
- In a bowl whisk the ingredients for the marinade. Season with salt and pepper.
- Brush the chicken with the marinade on both sides. Brush the bread with the marinade as well.
- Mix the tomatoes, cucumber, onion, olives, feta, oil, oregano, and white vinegar.
- Grill the chicken on both sides getting nice char marks to an internal temperature of 160 degrees using a thermometer, brush the chicken with the marinade throughout cooking. Once cooked set aside to rest for 5 minutes.
- Lightly grill the bread until golden brown.
- Serve the chicken and bread with salad.
